About
We continue our love affair with Alejo Castro's Volcan Azul farm with this red honey processed H10. H10 is an exciting recently developed hybrid bred for high yield, leaf rust resistance and high cup quality. The red honey process involves removing most of the fruit of the seed but leaving some mucilage in tact for fermentation. This coffee is sugary and sweet, with dried berries, mandarin and some slight spice!
Alejo's family farm has a rich history, with multiple awards and a commitment to sustainable farming. A sweet and interesting coffee for those with a discerning palate.
Brew Method
Filter: 16:1 water-to-coffee ratio (e.g., 20g coffee to 320ml water), medium-coarse grind
Recommended Resting
To get the best out of our coffees we recommend resting them. We have found for espresso the optimal age is 10 - 21 days after the roast date and for filter brew methods we find our coffees start tasting best after 3-4 weeks after the roast!
