About

The Trademark is our flagship coffee that we serve as both espresso and drip in our Revelstoke cafe. It's rich, full bodied and balanced with tasting notes of chocolate brownie and Nutella. It shows a butterscotch sweetness when served through milk. 
We're using a blend of two coffees from Deyvid Leandro and the Barbosa family. These producers have been growing coffee for generations and are industry leaders in Brazil. Coffee from their farms won the Cup of Excellence in 2024 and placed 2nd in 2025.

Brew Method

Filter: 16:1 water-to-coffee ratio (e.g., 20g coffee to 320ml water), medium-coarse grind
Espresso: 2.1:1 yield-to-dose ratio (e.g., 19g coffee to 40ml espresso), fine grind, 31-33-second shot

Recommended Resting

To get the best out of our coffees we recommend resting them. We have found for espresso the optimal age is 10 - 21 days after the roast date and for filter brew methods we find our coffees start tasting best after 3-4 weeks after the roast!
