No coffee menu is complete without paying tribute to the origin of coffee evolution, Ethiopia. This washed coffee comes from Yirgacheffe, a subregion of southern Sidamo in the south of Ethiopia. Typical of washed coffees from the region, it’s bursting with stonefruit, citrus and florals. We get apricot yoghurt, lemon sherbert and earl grey. It’s a really sophisticated and elegant coffee.
Coffee farming in Ethiopia is renowned for its perseverance with traditional and manual systems, careful drying and fermentation processes, and rigorous sorting to remove defects. This organic coffee is grown without pesticides or chemical fertilizers. Coffees from Ethiopia also benefit from the huge natural genetic diversity, allowing for a wide range of amazing flavours and disease resistance.
