Tropical and loud, yet super clean. We get pomegranate, kumquat, guava, tinned pineapple, set honey... A real treat.
This is our 2nd natural coffee from Costa Rica. It comes from Hacienda Sonora in Central Valley. The farm has been in the Guardia family for over 100 years, they grow over 20 varietals and have pioneered many processing techniques. This particular coffee was dried using their 'Piramide' method which involves piling the coffee into a layered pyramid during the hottest hours of the day to help modulate temperature and reduce the boozy flavour often associated with natural coffees.
The Obata varietal is a Timor x Villa Sarchi hybrid developed in by the IAC in Brazil that has recently been introduced to Costa Rica where it is thriving. It is a dwarfed leaf rust resistant varietal that is proving to be delicious!
